The Wedding. Oh, the wedding!

Wow. Katherine is just stunning in my opinion. Classic. Gorgeous. Such a princess.

So much work went into the wedding today. What a thing to watch! Truly fascinating to watch the history and tradition of the Royal Wedding.

Married in front of 2,000 people. Estimated 2 billion watching on television. The music was unreal, so pure and beautiful. And the message given was fantastic.

Alarm went off at 12:50 am. Uh. Do not want to open my eyes. But, I roll out of bed and start some coffee because I know I will need it desperately if I want to make it through the next 3 + hours. Beau sucked it up and watched with me. We sat in bed, Beau half asleep and me, beyond excited!!! So glad I got my butt up and watched the Royal Wedding Live. What a cool thing to say I did! And I got to see every detail, not just the highlights. What a day. The Brits sure do know how to put on a good show. Congrats to the happy couple!

Bacon Wrapped Shrimp, Clam Chowder and Halibut

Pan-Roasted Halibut in a Shrimp Chowder with Steamed Cherrystone Clams and Apple-Smoked Bacon

  • Level: Easy
  • Serves: 6 servings
  • Ingredients

    • 1 1/4 pounds thick-cut apple smoked bacon, 1/4 pound chopped (the rest left in strips)
    • 3 cups diced peeled red potatos
    • 4 tablespoons unsalted butter
    • 3 medium leeks (white parts only), halved lengthwise, cut into 1/4-inch slices, well rinsed and patted dry (about 1 cup)
    • 1 cup finely chopped yellow onions
    • 1 teaspoon minced garlic
    • 1/4 cup all-purpose flour
    • 2 1/2 cups heavy cream
    • 1 1/2 cups bottled clam juice
    • 1 1/4 teaspoons salt
    • 1 1/4 teaspoons freshly ground pepper
    • 1 1/4 pounds medium shrimp, peeled and deveined
    • 1 can of chopped clams
    • 1 tablespoon olive oil
    • 6 (6-ounce) halibut fillets
    • 1/2 cup chopped fresh parsley leaves, for garnish

    Directions

    Set a 12-inch saute pan over medium heat and cook the bacon strips until crisp, about 8 to 10 minutes. Transfer to paper towels and set aside.
    Place the potatoes in a 1-quart saucepan and cover with water. Bring to a boil and just until tender, about 8 to 10 minutes. Refresh under cold running water, and set aside.
    Preheat the oven to 400 degrees F.
    Melt the butter in a large, heavy saucepan over medium-high heat. Add the chopped bacon until it begins to brown, about 5 minutes. Add the leeks and onions and cook, stirring, until soft, about 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the flour and cook, stirring constantly, until a light blond roux forms, about 5 minutes. Add the cream, shrimp stock, and 1/2 teaspoon each of the salt and white pepper and bring to a simmer. Simmer for 10 minutes, stirring occasionally. Add the shrimp, clams and potatoes and stir well. Reduce the heat to medium-low, cover, and simmer, stirring occasionally, until the clams open and the shrimp are just cooked through, 6 to 8 minutes. Remove from the heat and discard any clams that did not open. Cover to keep warm.
    Heat the olive oil in a large nonstick ovenproof skillet, or in 2 smaller skillets, over high heat. Season each halibut fillet on both sides with 1/8 teaspoon each of the remaining salt and white pepper. Place the fillets in the pan(s), reduce the heat to medium-low, and cook until a golden brown crust forms, about 3 minutes. Turn the fish, place in the oven, and roast until just cooked through, 4 to 5 minutes. Remove from the oven.
    To serve, ladle the chowder into 6 rimmed soup bowls, arranging 3 clams around the rim of each bowl. Place a halibut fillet in the center, and lay 3 strips of bacon on top of the fish. Garnish with the parsley and serve immediately.

    6 month check up for my munchkin

    If you answered watching the Royal Wedding, you are not alone! Yes, I (and possibly Beau) am waking up from my night of beauty sleep to watch William and Kate tie the knot live at Westminster Abbey! Oh beyond excited. Am I a tad too excited considering that this doesn't have anything to do with the country in which I live? Perhaps. But it is strangely addicting...The countdown is on!
    Wish I were here!

    My favorite things right now

    1. Aveeno Calming Comfort Lotion. Rochelle suggested I try Aveeno products because Kensie's skin has been sensitive lately. I love LOVE the smell of this one, I think I may have to buy the shampoo next...
    2. Ghost Pines Chardonnay. Ronda turned me on to it, really really good.

    3. Munchkin Fresh Food Feeder. Rochelle also suggested these! Her friends swear by them and they're fabulous for teething. You put ice or frozen fruit in the pouch. Kensie goes to town on bananas.

    4. Bed Head Moisture Maniac Shampoo and Conditioner. Tay did my hair while she was here so I thought I should invest in some decent hair product. This stuff has a yummy citrusy smell and I'm now obsessed.

    6. Cooking. If you haven't noticed, I've been brushin' up on my cooking and baking skills and loving it so much.

    The hubs helped me last night make a chicken dinner with rice pilaf.

    Ricotta, Spinach, and Ham Stuffed Chicken Breast Marsala with Pine Nut Pilaf

  • Cook Time: 30 min
  • Level: Easy
  • Serves: 4 servings 
  • Ingredients

    • Extra-virgin olive oil, for drizzling
    • 4 tablespoons butter, divided
    • 1/2 pound cremini mushrooms, sliced
    • 4 boneless, skinless chicken breasts
    • Kosher salt and freshly ground black pepper
    • 3/4 cup fresh ricotta or sheep's milk ricotta
    • 1 box organic frozen spinach, defrosted, squeezed dry, and separated
    • Freshly grated nutmeg
    • 4 slices speck or prosciutto
    • Flour, for dredging
    • 2 cloves garlic, thinly sliced
    • 1/2 cup marsala wine
    • 1 1/2 cups chicken broth
    • A handful fresh flat-leaf parsley, finely chopped
    • Pine Nut Pilaf, for serving, recipe follows

    Directions


    Cut 4 long pieces of kitchen twine.

    In a large skillet over medium-high heat, add a liberal drizzle of extra-virgin olive oil plus 2 tablespoons butter and saute the mushrooms for 8 to10 minute to darken.

    Meanwhile, butterfly the chicken breasts open and pound them out very thin, no more than 1/8-inch thick. Season the chicken with salt and pepper and top each piece of chicken with 2 tablespoons ricotta cheese and spread it around. Top with 1/4 of the spinach and season with freshly grated nutmeg, salt and pepper. Then top each piece of chicken with a slice of speck. Roll the chicken into bundles and secure with twine. Season the bundles with salt and pepper and dredge lightly in flour.

    Season the mushrooms with salt and pepper and remove to a plate. Add extra-virgin olive oil to coat the pan. Add the chicken and cook over medium-high heat for 15 minutes. Remove the chicken to a plate and cover with foil. Add the remaining 2 tablespoons of butter to the pan, sprinkle in 2 tablespoons flour, and deglaze the pan with marsala. Add the broth and cook to thicken, about 1 to 2 minutes, and then add the mushrooms to combine. Remove the string from the chicken and top with sauce. Serve with Pine Nut Pilaf.

    Pine Nut Pilaf:


    • 2 tablespoons butter
    • 1/2 cup orzo pasta
    • 1/4 cup pine nuts
    • 1 cup long grain rice
    • 2 cups chicken stock

    Melt the butter in a saucepot over medium heat. Add the orzo and pine nuts and toast until golden. Add the rice and stir in the stock. Bring to a boil, reduce the heat to simmer, and cover. Cook for 18 minutes. Fluff with a fork and serve.

    An empty house once again

    Recipe: Ramen noodle stir-fry

    Ingredients
    • 10 ounces top loin, cut into thin strips
    • 1 cup dehydrated mushrooms (shiitake, morel, etc.)
    • 4 tablespoons soy sauce
    • 1 tablespoon fresh ginger, rough chop
    • 1 tablespoon chopped garlic
    • 1 package Ramen Noodles (discard seasoning packet)
    • 1 carrot, julienne
    • 1/2 cup green onion, julienne
    • 1/2 green bell pepper, julienne
    • 1/2 red bell pepper, julienne
    • 1/2 cup sugar snap peas
    • 4-6 baby corn on the cob
    • 1 teaspoon red pepper flakes
    • The juice of 1 lime
    • 1 tablespoon sesame oil
    • 1 tablespoon sake
    • 1 teaspoon white sesame seeds
    • A few slices of lime
    • A few sprigs of fresh cilantro
    Preparation
    In a small sauce pot, over medium-high heat, add 2 cups of water, dehydrated mushrooms, ginger, 1/2 tablespoon chopped garlic, and 2 tablespoons of soy sauce. Bring to a boil and turn the heat off. Add the ramen noodles, cover with a lid and let sit for 5-7 minutes.
    In a large saute pan over high heat, add the sesame oil, beef, carrots, green onions, peppers, snap peas and baby corn. Allow the vegetables and beef to caramelize for 5-6 minutes. Add ½ tablespoon chopped garlic, lime juice, 2 tablespoons of soy sauce, red pepper flakes, and the mushrooms from the broth. You can add the ginger if you like. Let cook for 2-3 minutes, then add the sake and sesame seeds. Cook an additional 2 minutes to reduce the liquid. If you like a more "brothy" stir-fry, turn off the heat and continue to the next step.
    Once the beef is finished, using tongs, add the noodles to the center of a plate or bowl. Add a cup or so of the vegetables and beef over the top, garnish with fresh lime and cilantro, then serve with a small drizzle of sesame oil.


    Kensie's dinner: peas

    Desert; Seven Layer Bars

    Such an easy recipe and unbelievably delicious.
    Seven-Layer Bars
    Yield: 18 bars
    1 cup sweetened flaked coconut
    8 tablespoons (1 stick) unsalted butter
    9 graham crackers (5 ounces), crushed
    1 cup finely chopped walnuts
    1 cup semisweet chocolate chips
    ½ cup white chocolate chips
    ½ cup butterscotch chips
    1 (14-ounce) can sweetened condensed milk
    1. Adjust an oven rack to the lower-middle position and preheat to 350°F. Spray a 9×13-inch baking pan with non-stick spray. Line the pan with two overlapping pieces of foil or parchment paper, leaving overhang to act as handles for lifting the bars out of the pan. Spray with non-stick spray.
    2. Spread the coconut on a baking sheet and bake until the outer flakes just begin to brown, about 4 minutes. (Keep a close eye on it – coconut can go from slightly browned to burnt in a matter of seconds.) Set aside.
    3. Melt the butter and combine with graham cracker crumbs in a small bowl. Toss with your fingers until the butter is evenly distributed. Press the crumbs evenly onto the bottom of the prepared pan.
    4. In order, sprinkle the walnuts, chocolate chips, white chocolate chips, butterscotch chips, and coconut over the graham crumbs. Pour the condensed milk evenly over the entire dish.
    5. Bake until the top is golden brown, about 25 minutes. Cool in the pan on a wire rack to room temperature, about 2 hours.
    6. Remove the bars fromthe pan using the foil or parchment handles and transfer to a cutting board. Using a sharp knife or bench cutter, cut into 2 by 3-inch bars.
